Vegan “Cold Doughs” (Kolacky/Kolaczki Cookies)

Professionally, I’m a Nutrition and Wellness Coach, but I’m also an experienced home-baker. My love of desserts and baking (like so many others) is rooted in my childhood, and my baking style is steeped in the love, comfort, and tradition that so many of my childhood experiences brought to me. Each of my cookies and baked goods also has its own little flair though that makes it uniquely mine. Under the Walnut Tree's baked goods are the perfect combination of tradition and upscale simplicity that will set them apart from anything you have tried before. I became interested in and started learning how to cook and bake entirely from scratch around the age of 22 – and through A LOT of trial and error – I began developing my own recipes for some of my favorite cookies and desserts. My daughters and I transitioned to a vegan diet after I completed by Bachelor's Degree in Nutrition from ASU, and it was at that point, that creating vegan baked goods and desserts that have the same textures and tastes as traditional baked goods became almost like an obsession for me. When friends, neighbors, and co-workers started raving about the cookies and desserts I was bringing to functions, I knew I was on to something special!
